In the orm.xml files all names are lower case, but they are created in upper case in the database.

How to make schema tool to keep unchanged the case of column names ?

All databases have default capitalisations, and a set of capitalisations that they support. The log tells you what they are and what is chosen. Docs tell you more http://www.datanucleus.org:15080/products/accessplatform_5_2/jpa/mapping.html#datastore_identifiers
